Greens and goodies, farm raised meats, luscious baked things, ... Last weekend we celebrated my older son's birthday and at his request I made quiche from Julia Child's The Way to Cook book - the Jarlsburg swiss cheese and thick sliced peppered bacon (OMG) and fresh spinach with Jarlsburg (also OMG). See? Here is the just the beginning of the recipe for the spinach quiche - this is just the spinach part and OHHHHH so good it is...
Spring Spinach Saute
Melt 2 T. good butter in a large skillet
Add 2-3 finely chopped scallions (green onions)
Saute over medium heat for 2-3 minutes
Add large bunch fresh spinach (whole baby spinach or chopped large leaf)
Saute over medium heat Turning every now and then to ensure even coating and wilting
until thoroughly wilted, but still bright green
Season lightly with salt & pepper. Serve immediately.

Lost a Photo, but Gained a Knowledge
Bedzzled by the obtuse commands on my digital camera, I lost the photo proof that our executive director and I attended a presentation at the Tuckahoe Women's Club last week where the guest speaker was Will Allen. Aside from the whole MacArthur Genius Award thing, Allen is to Urban PRODUCTION Farming now what Michael Jackson was to music videos in the 1980s. Based in Milwaukee Wisconsin, his operation has grown from a single urban production operation in the outskirts of a major metropolitan food desert to an organic food community center that seems to be serving the world. Ok, a little gushy, but the impact of a fundamental principle (ALL people are entitled to good, healthful food) and an idea (it ALL starts with the soil) cannot be understated. I will be posting a video clip from the presentation and there will be an interview with Sunny Gardener's Lightly on the Ground on WRIR.org very soon where you can hear Allen describe the importance of the production farming philosophy and the reality of its impact on the ground with PEOPLE.
